Hash Brown Waffles

These beauties are such a favorite in our house. I make them whenever we have breakfast for dinner (unless we're having waffles and the iron is already occupied), but they're just a super simple side dish perfect for any night of the week.
Hash Brown Waffles

3 yukon gold potatoes (or russets, or sweet potatoes, etc)- peeled, grated, and wrung dry
1 tbs olive oil
3/4 tsp salt
1/4 tsp pepper

Combine ingredients in large bowl. Preheat waffle iron to med-high. Grease or spray with cooking spray. Mound 1/2 cup of potatoes into waffle iron. Cook about 10 mins.

  2. Could I use a regular handheld grater or does it need to be a box grater? Would a regular grater make the pieces too moist and small?

    1. What kind of handheld grater are you talking about? Something like a Microplane, with *really* tiny holes? I'm not sure about that one...
