Peanut Butter Bites

When I was pregnant with S, I came across an article in a pregnancy magazine that listed some of the best things to eat while pregnant. These little gems were included in that list, along with the super simple recipe.
I ate a lot of them while pregnant, while nursing, while stressed, while bored, while...

...And we're still eating them these days. If you like No-Bake Cookies, you'll like these. Super simple to make, though super messy to make as well. If you try these and come up with a genius way to avoid the seemingly inevitable mess, let me know.

Peanut Butter Bites

3/4 cup oats
1/2 cup peanut butter
1 tbs honey
3/4 cup chocolate chips

Lightly coat a baking sheet with cooking spray. Stir together the oats, peanut butter, and honey. Roll them into 1 inch (walnut sized) balls and place them on the cookie sheet.
Melt chocolate chips in the microwave in 30 second intervals, until smooth. Dip peanut butter bites in the melted chocolate to coat. Return to the cookie sheet and refrigerate until set. Place in a zip-top bag (or just devour).

  3. I am making those ASAP! I live in a rental and have a crazy meniacal oven and cannot bake things. Give me all the no-bake recipes!

  4. These look so delicious! About how many does the recipe make? I'm doing Weight Watchers and wanted to calculate the points per bite before I made these and inevitably crammed 4 or 5 in my mouth immediately.

  5. @The Naked Wife- you can roll them out as large or small as you like. I think I usually get around 10-12. The last time I made them I doubled the recipe and rolled them a bit smaller than usual, because my husband finds them a bit rich for his (puny) taste. :) Hope that helps somewhat.
