Spinach-Alfredo Pizza

I used to frequent Cici's Pizza quite often, not only as a child (when our family hit up buffets like they were going out of style), but also as a poor college student. Cheap pizza, yes, but their spinach-alfredo pie was sooooo good. I've created my own version since and it's even better. I make my own crust, using Mark Bittman's recipe from How to Cook Everything. I also love the crust from Joy of Cooking. You can use your favorite recipe or use store-bought.
Spinach-Alfredo Pizza
1/2 cup heavy cream
3 tbs grated Parmesan cheese
salt and pepper to taste
2 cups fresh spinach leaves, roughly chopped
1 cup shredded mozzarella cheese

Preheat oven to 500 degrees. Sprinkle a little cornmeal on your baking sheet and stretch out your pizza dough. Leave it to rest for a bit while you prepare your sauce. Heat your cream and Parmesan cheese over medium-low heat while the oven is coming up to temperature and you're chopping your spinach. You just want it to reduce and thicken a bit. Check for seasoning and add salt and pepper if needed. Top your dough with the spinach, spoon over your alfredo sauce, top with mozzarella. Drizzle the entire pizza with a bit of olive oil, if desired. Bake at 500 degrees for about 8-10 minutes, or until the crust is golden, the cheese is is browned, and the sauce is bubbling and intoxicating.

  3. I made this tonight with a slight modification. Om to the nom!

    (PS - Slight modification = stirring chopped frozen spinach into the sauce, and adding chicken on top.)
