Here's what we feasted upon last week:
Super Nachos- yellow corn tortillas chips topped with chipotle marinated chicken (I can't find a link to this one, so I'll post it soon!), black beans, and cheese. Served with homemade salsa, guacamole, and sour cream.
Homemade Pizzas- topped with pepperoni and portabello mushrooms (for me, a la my favorite pie) and fresh mozzarella (what a difference this made!!)
Sesame Chicken with brown rice and Sesame Noodles
Mustard Pork Chops with brown rice and roasted carrots
Chicken and Black Bean Tacos- all I did, literally, was place 3 boneless, skinless chicken breasts in the slow cooker, seasoned with salt and pepper and my taco seasoning blend, topped with a can of black beans (drained) and a bit of salsa. Cooked on low for 4 hours or so, and we ate it over rice and/or stuffed into tortillas!
Chicken and Pasta in Tomato Cream Sauce- an original creation...I'll post this one soon as well.
Goodness gracious. Reading your weekly menu reminded me that in the hustle and bustle of life I completely forgot to try your secret recipe. I have failed you. Am I too late to still help you out???
ReplyDeleteNo worries. I did go ahead and submit the recipe, but I'd still love to hear what you think of it, if you end up making it. One thing, though- add 2 tbs olive oil instead of just 1. (I think I forgot to change that...)
